THE GLOBAL IMPACT OF FAST FOOD: TRENDS, HEALTH IMPLICATIONS, AND SOCIO-CULTURAL CHANGES

Rapid economic development and the growth of global trade and cultural exchanges have accelerated changes in people's lifestyles. These changes have affected people's eating habits. People have started to prefer fast-food diet, which means fast and ready-to-eat nutrition. When the change in people's eating style and the preference for fast-food diets have social, cultural and health impacts, this issue has been the subject of research by scientists. This study aims to investigate the influential publications and research trends in this field using bibliometric analysis. Using the Web of Science database, we identified all original articles on traditional foods between 1980 and 2023. Bibliographic and citation data, keywords, citation networks and co-citations related to traditional foods were collected and analyzed using the VOSviewer program. A total of 1,660 articles were retrieved from the Web of Science database. The articles were cited 36,354 times in total (35,526 times without self-citations). The year 2022 had the most citations (4,371). The Hirsch index was 99. The leading country by number of published articles was USA ( n=540 ). Publications came from 99 countries globally. The most preferred language for publications was English(n = 1,579). The most active research field was Nutrition Dietetics (n = 361). The most prolific publisher was Elsevier (n = 413). The journal that published the most articles was Public Health Nutrition (n: 50). The institution that published the most was Harvard University (n = 39). The most used keywords were “fast food”. Through bibliometric tools, an exponential increase in studies on traditional foods up to 2021 was observed. It is predicted that fast-food nutrition will be increasingly researched as it is associated with health and that fast food products will continue to occupy an important place in the food industry.
