Spices are plants that have been known and widely used since ancient times. People have gradually discovered the therapeutic, nutritional, flavouring and preservative properties of most plants. Due to the importance of spices, wars have been fought in this field and they have been an indicator of commercial and economic power. They are used in many fields such as medicine, cosmetics, perfume production, food preservatives, food colouring, etc. The increasing use of plants, especially in the field of health, has gained importance with the determination of their active ingredients with developing analytical techniques. The risky aspects of their use are also an important point to be considered. In this study, the properties and chemical structures of some spices, which are widely used by people in different areas of use, were investigated.
