Cumulative Effect of Flavonoid, α-tocopherol and Ascorbate on Lipid Peroxidation Kinetics

This article proposes modeling of the joint antiradical action of flavonoid (vitamin P), α-tocopherol (vitamin E) and ascorbic acid (vitamin C) in the process of lipid peroxidation (LPO) taking into account the synergy effect. The synergy effect is that ascorbate restores α-tocopherol and flavonoid from their radical forms. This model is based on the standard kinetic scheme of LPO and is an extension of the previously proposed model with two conjugated antioxidants (vitamins E and C), and takes into account that the flavonoid is able to effectively control the initiation stage. The effect of the flavonoid is manifested primarily in a significant decrease in the rate of LPO initiation. The kinetic model of LPO is represented by a system of differential equations and is minimal. The LPO scheme involving the above three antioxidants above three antioxidants, taking into account their main contributions at different stages of LPO, is presented below in the text. Taking into account the performed approximations and using quasi-stationary conditions for lipid radicals R• and ROO•, this model makes it possible to obtain analytical solutions for the concentrations of lipid antioxidants (α-tocopherol and flavonoid) in the reduced form (InH) and in the radical form (In•), and for the concentration of the main LPO product (lipid hydroperoxide ROOH). An analysis of the characteristics of the process of lipid peroxidation with the participation of the three indicated antioxidants is carried out, the features of the synergy effect of vitamins E, P and C and its significance for the effective control of this process as a whole are discussed.
