This article addresses food safety as the foundation of the health of living organisms. It is emphasized that food safety is a globally discussed topic that affects various aspects of daily life. Identifying sources of contamination based on production practices during food production and processing is crucial for consumer health. Factors causing food contamination can threaten its safety for consumption and pose potential risks to human health. Therefore, several measures must be implemented at every stage of the food chain—from production to consumption—to prevent food contamination. One of the main sources of harmful substances for the human body is food. Food plays a significant role in human health and is essential for protecting physical, mental, and emotional well-being. Every food item fulfills specific functions for the body, and proper nutrition not only improves physical condition but also prevents diseases. Food determines the most vital physiological processes in the human body, serving as a source of plastic material and energy necessary for the formation and renewal of tissues and cells. Therefore, food is one of the most critical factors ensuring public health, work capacity, and creative potential. The greatest danger to food comes from chemical compounds with mutagenic properties, which can have carcinogenic effects. In addition to chemical mutagens, natural mutagens may arise from storing raw materials at high temperatures or be collected from the external environment during the life processes of plants and animals. Consequently, ensuring the genetic safety of the population and evaluating the genotoxicity of food products are among the most pressing tasks today. In addition to the necessity of educating consumers about food safety, providing them with safe food is also essential. In short, food safety ensures the safe delivery of food to the consumer by eliminating risks that may arise at any stage of the supply process. Although managing factors threatening food safety may seem theoretically simple, research shows that there are several unresolved issues in this area. The study aims to identify factors affecting food safety at all stages, from production to consumption of food products. It focuses on foodborne diseases, regulation of the food industry, protection of consumer health, prevention of harmful and hazardous substances, pathogenic microorganisms, and chemical and physical contaminants, as well as exploring factors influencing consumer safety.
